As I recall from playing years ago, you can level to X as a fighter, Y as a thief and Z as a mage. Experience isn’t shared between them and leveling in one doesn’t level the others. So it makes sense to avoid as much XP as possible until you unlock your preferred class(you start as Fighter), then stay as it through to the end.
